Ingredients

  • 1 cup Steel cut Oats
  • 3 cups Water
  • 1 cup Coconut milk
  • Sweetner of choice
  • Fruits and nuts for toppings
  • ΒΌ tsp Salt optional

Instructions

  • Add the steel-cut oats, water, and a pinch of salt to the Instant Pot. And mix it well to combine.
  • Secure the lid and set the Instant Pot to "Manual" or "Pressure Cook" mode on high pressure for 5 minutes.
  • Once the cooking time is complete, allow the pressure to release naturally for about 10 minutes, then manually remove any remaining pressure.
  • Open the lid and stir in the coconut milk and your sweetener of choice. Mix well to combine.
  • If the oats are too thick, add more coconut milk or water to reach your desired consistency.
  • Serve it warm with lots of fresh fruits. I love to add nuts for added crunch.

Notes

  • You can cook oats with any plant-based milk instead of water. However, do not use regular milk, as it can burn.
  • Salt is optional, but it enhances the overall taste of the oatmeal.
  • You could use sweeteners like honey, maple syrup, molasses, jaggery, coconut sugar, and palm sugar. But add the sweetener after pressure cooking the oats.
  • If you use a 3-quart instant pot, you can cook only 1 cup of steel oats. Also, make sure you fill the pot at the recommended level.
  • Using an 8-quart Instant pot, you can cook 2 cups of steel-cut oats and reduce the cooking time to 3 or 4 minutes.
